English muffin sandwich with Poli
Ingredients
- Poli
- pickled gherkins
- cheddar cheese
- fried bacon
- 1 egg
- 1 tbsp vinegar
FOR THE MUFFIN DOUGH:
- 400g flour
- 7g dry yeast
- 1 large egg
- a little sugar
- a little salt
- 200ml warm milk
- 100ml lukewarm water
- 50g butter
English muffin sandwich with Poli
Preparation process
- Knead the dough ingredients in a large bowl until smooth. Cover the bowl with a cloth and leave the dough to rise in a warm place for at least one hour. Then knead it again and leave it to rise for at least another hour.
- On a surface dusted with flour, roll out the dough to a thickness of 1.5-2cm and use a circular mould to create several discs. Cover with a cloth and leave to rise for about an hour.
- Cook the muffins in a pan for a few minutes on each side until golden brown.
- To make the poached egg, bring water and a little white wine vinegar to the boil in a saucepan. Lower the temperature until the water is just below boiling point and swirl the water with a ladle. Gently lower the egg that you've broken into a bowl into the whirlpool, then use a spoon to help the white wrap around the yolk. Poach the egg for about 3 minutes so that the white sets and the yolk remains runny. Transfer the egg onto a paper towel to soak up the water.
- To assemble the sandwich, cut the muffin in half, then place the slices of Poli on the bottom, adding the gherkins, cheese and bacon. Lay the poached egg on top and cover with the top of the muffin.
