Indian Bombay-style sandwich with Poli

Ingredients

  • 6 slices of bread
  • 120g grated Poli
  • 120g grated mozzarella cheese
  • 2 small potatoes
  • 1 large tomato
  • 1 small cucumber
  • 2 spring onions
    (or 1 small regular onion)
  • butter

FOR THE SPICE MIX:

  • 1 tbsp cumin
  • 1 tbsp coriander
  • 1/2 tsp black pepper
  • 1 tsp ground cloves
  • 1/2 tsp cinnamon
  • 1 tsp salt

FOR THE GREEN CHUTNEY:

  • coarse salt
  • 60g fresh parsley
  • 30g fresh mint
  • 1 large green chilli
  • 3 garlic cloves
  • ½ tsp of the spice mix
  • about 30 ml of water

Indian Bombay-style sandwich with Poli

Preparation process

  1. Start by peeling the potatoes and boiling them in salted water. Meanwhile, wash and chop up the other ingredients. When the boiled potatoes have cooled down, cut them into thin slices. Grate the Poli and cheese.
  2. Mix the spices in a bowl. Prepare the green chutney by blitzing all the ingredients in a food processor until smooth.
  3. Spread butter and green chutney on a piece of bread, then arrange the potato slices and some chopped onions on it. Season with the spice mix and add some grated Poli and grated cheese.
  4. Stack a second slice of bread on top. Brush this piece of bread with butter and green chutney, then lay on the sliced tomatoes, sliced cucumber and more onion. Sprinkle the spice mixture on top and add more grated Poli and grated cheese. Cover the sandwich with another piece of bread and spread some butter on top of that.
  5. Place the sandwich in a heated ribbed skillet, with the buttered slice facing down. Use a spatula to flatten it out a little. Spread some butter on its top layer and then turn it over. Before serving, let the sandwich cool a little and then cut in half to make two triangles. Add a little green chutney to the plate for dipping.
