Japanese Katsu with Poli

Preparation process

  1. Cut the Poli into 1cm thick slices and coat them in flour, egg and panko breadcrumbs. Fry them in a frying pan until golden. Place them on a wire rack to drip, allowing them to crisp up.
  2. Thinly grate the white cabbage and lightly salt it.
  3. Mix the ketchup, soy sauce and worchester sauce in a 4:1:1 ratio to make a katsu sauce.
  4. Spread some katsu sauce on your bread and place a slice of the fried Poli on it. Add the white cabbage and finish with the mayonnaise. Prepare the other sandwiches in the same way.
  5. Cover with another slice of bread and lightly press down with a wooden chopping board to flatten the top layer over the Poli. The edges of the bread can be cut off to enhance the contrast between the soft and the crispy.
