Japanese Katsu with Poli
Preparation process
- Cut the Poli into 1cm thick slices and coat them in flour, egg and panko breadcrumbs. Fry them in a frying pan until golden. Place them on a wire rack to drip, allowing them to crisp up.
- Thinly grate the white cabbage and lightly salt it.
- Mix the ketchup, soy sauce and worchester sauce in a 4:1:1 ratio to make a katsu sauce.
- Spread some katsu sauce on your bread and place a slice of the fried Poli on it. Add the white cabbage and finish with the mayonnaise. Prepare the other sandwiches in the same way.
- Cover with another slice of bread and lightly press down with a wooden chopping board to flatten the top layer over the Poli. The edges of the bread can be cut off to enhance the contrast between the soft and the crispy.
