Mexican sandwich with Poli

Ingredients

  • sesame bun
  • 5 sun-dried tomatoes
  • 1 tbsp honey
  • 1 tbsp BBQ sauce
  • chilli powder or chilli sauce (optional)
  • Poli
  • 1 avocado
  • the juice of half a lime
  • 1 tbsp pickled jalapeno peppers
  • fresh coriander
  • 2 cheese slices
  • ½ a red onion
  • corn chips

Mexican sandwich with Poli

Preparation process

  1. In a food processor, blend the sun-dried tomatoes, honey and BBQ sauce. If you want your sandwich to be extra spicy, add some chilli powder or chilli sauce.
  2. Cut the bun in half, spread the sauce on the lower slice, and lay on your Poli slices. Cut the avocado open, remove the stone and scoop out the flesh. Then slice it up, drizzle with lime juice and spread it over the Poli. Augment your sandwich with onion rings and jalapeno peppers.
  3. Top it with cheese, add some coriander, and cover it all up with the top half of the bun.
  4. Serve with corn chips.
